Geographically and climatically similar to Tuscany, the Waipara Valley is an ideal place for growing olives. The rich alluvial soils and cool climate of the Waipara Valley combine to produce outstanding olives with distinctive flavour. Olive harvest begins in June, with all olives being processed within 24 hours of picking to protect the integrity of the oil. Terrace Edge Extra Virgin Olive Oil has an herbaceous, grassy flavour with intense peppery characteristics.
